ONLINE: Discover the Art of Varenyky with Olia Hercules

Discover the Art of Varenyky with Olia Hercules

Join Olia for a live, interactive online workshop where we will explore the world of Varenyky, Olia’s ultimate source of comfort food. Under Olia’s expert tuition, we will make everything together from scratch during the class. We will learn about whether the perfect Varenyk exists, and why Olia would always choose Varenyky as her last supper. We will also ask whether there is an ultimate number of Varenyky to be eaten in one sitting! 

The class will start with an introduction, then we will make the dough. We will look at fillings, exploring traditional fillings and perhaps the not-so traditional fillings. We will learn Olia’s special techniques to elevate pinching so that our Varenyky are served in all their glory. 

Olia will talk us through various accompaniments which can be served with Varenyky, and we will make Pelyustka, cabbage pickled with beetroot to look like rose petals. Olia will show us how to serve this versatile pickle alongside the Varenyky to create a beautiful plate of food. 

Recipes will be provided to registrants one week prior to workshop!

While participation is free, Olia is fundraising for Ukraine through the Legacy of War Foundation, an international charity providing support to civilians affected by conflict.

Olia Hercules: More about the author. 

Hailing from Kakhovka, in the south of Ukraine, Olia has taken much inspiration from her heritage to inform her style of cooking. She is an acclaimed author of four established cookbooks. Her first one, Mamushka, celebrated her family recipes and was translated into over 10 languages. Mamushka won the prestigious Fortnum and Mason Award for best debut cookbook and Olia herself won the Observer’s Rising Star in Food award. Mamushka was followed by Kaukasis, a culinary journey through Georgia, Azerbaijan and beyond, then Summer Kitchens, a book exploring Ukrainian regional cooking, and, more recently, Home Food, an ode to cooking for her family. Olia lives in London with her sons Sasha and Wilfred, and her husband, fellow food writer and photographer, Joe Woodhouse. She hosts regular cookery classes online through her Patreon platform, and also teaches in-person cookery classes at home.
